Celery boats

This is an easy snack that just about everyone can agree is delicious – even me (the lady who isn’t the most fond of celery!) I really like bringing these with my lunch to work.  If you keep them in an upright container (ie. not a plastic baggie), they will stay mess free.

Ingredients 

  • 1-2 Stalks of Celery, washed
  • Peanut or other nut butter

From here – the toppings are up to you! I used the following.

  • Oats
  • Hemp Hearts
  • Cinnamon
  • Chocolate Chips

Instructions

  1. Chop celery into whatever size you’d like. I experimented and found I liked the bite sizes better.
  2. Spread peanut butter(or whatever else type of nut butter you’re using) so that the bottom of the celery is not visible, but is no higher than the  “lip” of the celery stalk. If it’s higher, it’s going to get messy when you put your other toppings on.
  3. Throw them toppings on!
  4. Enjoy!
